There is nothing I love more than spring! It's one of my favorite seasons even if it means my allergies are going crazy. Why? Because the flowers are blooming, the neighbors come out, the kiddos are playing outside, perfect 70 degree days, and GRILLING! Grilling season has officially begun.

I like to keep it simple... marinate the chicken overnight or for at least 4 hours. Mushrooms rubbed in olive oil, sprinkled with pepper and salt.

Throw it on the fire and while the hubby is out there with the crazy kids I'm inside making garlic lemon couscous topped with cherry tomatoes and cucumbers.

In no time you have one of our favorite grilled meals! It's simple but yes it tastes as good as it looks!!
