Sadly, this year I had to keep it low key. We have been so busy packing and having family time that I haven't even had a real chance to prep. Thank goodness Cindy is only one and I have next year to make it extra special. I couldn't let the day pass without doing something so we invited Auntie Neen [my bestie] over for a green eggs and ham breakfast [grown up style].
It was her first green eggs and ham breakfast and she was pretty excited.
Looks yummy huh. It actually was. It's not in the book, but I toasted some English muffins with cheese to go with the green eggs and ham. And the taste tester loved the English muffin the most!
We watched some Dr. Seuss episodes from DVD's we got from Cindy's birthday during breakfast. They look busy but we actually watched it.
For snack we had Cat in the Hat fruit stackers. These are made with the wonderful combination of strawberries and bananas. Yum-yum-yum.
I am embarrassed to say that I didn't even get to decorate. The only thing I did was put up some green pom poms. I tried making them with printed napkins and they are oh so cute!!!! I love it!
It's a shame because I had these three lovely banners in a box somewhere on their way to Germany.... next year I guess.
Even though it was small, we had a nice time and laughed a lot [as usual]. Thanks so much Neen for joining us for breakfast.
And once it was over, Cindy and I sat and of course read some of our favorite Suess books, including Green Eggs and Ham.

We watched Cat in the Hat and another movie and had readers come to class. It was busy and hectic, but the children loved it. Sorry, but the eggs do not look appealing. :-) mn

Wow how the eggs turned into green, I think some mashed mint is added in it or any other thing. The banana and strawberry combination is awesome.
